Mutton Galouti Kebab

In a mixing bowl, add 500 gms mutton keema, 2 tbsp raw papaya paste, 1 tbsp onion paste, 2 tbsp ginger garlic paste. 1 tsp cardamom powder, , 1 tsp coriander powder, 1 tsp chilli powder, 2 tbsp chana powder, 21/2 tsp garam masala, 2 tbsp oil, and salt to taste. Mix all the ingredients well and allow it to refrigerate for 40 minutes. Make medium-sized tikkis out of the mixture and fry them on a non-stick pan in ghee. Serve hot. (Image: istock)

03/6​Konkan Mutton Curry

Marinate 500 gms of mutton using 1 tbsp salt and2 tsp ginger garlic paste. Allow it to rest for 20-30 minutes. Next, shallow fry it in coconut oil and set it aside. In the same pan, fry 1/2 cup grated coconut and 1 onion and set aside. Meanwhile, dry roast 1 cinnamon stick, 3 cloves, 3 cardamom, 2 star anise, and 1 tbsp cumin seeds in another pan and blend them together with the coconut and onion mixture along with 1inch ginger, and 5-7 garlic cloves to a smooth paste. In the same pan, add some more oil, and 1 chopped onion. Cook it for 2 minutes, and then add the paste and mutton piece. Adjust salt and cook till the meat is cooked well. 04/6​Dhabe ka Keema

Heat 2 tbsp oil in a pan, and then add 1 bay leaf, 2 green cardamom, 1 tsp cumin seeds, and 2 cloves. Let them release the aroma. Next, add 2 chopped onions and cook till they turn golden brown. Add 4 garlic cloves, 2 tsp ginger, and 1 tbsp butter. Sauté well. To this, add 2 green chilli and 1/2 cup chopped capsicum. Cook for 3 mins, and then add 1 tsp garam masala, 1 tsp turmeric powder, 1 tsp red chilli powder, 1 tsp cumin powder, 1 tsp coriander powder, 1/4 tsp asafoetida and salt to taste. Cook for 5 minutes. Now, add 250 gms mutton mince and cook for another 5 mins. Next, add 1 tsp sugar, and 2 tbsp lemon juice. Cover and cook for 10 minutes on a medium flame. Garnish with coriander leaves, and serve. 05/6​Mutton Cutlet

Dry roast 1 tsp coriander seeds, 1 cinnamon stick, 1 tsp black pepper, 1 tsp cumin, and 3 cloves in a pan and grind them into a fine powder. In the same pan, add 2 tbsp and sauté one chopped onion. Meanwhile, pound 4-6 cloves of garlic, 2 tsp ginger, and 2 green chillies, and add it to the onion. Add salt to taste and the fine masala powder. Sauté it all together and add water to mix well. To this, add 500 gms minced mutton, 1 tbsp garam masala, and salt to taste. Sauté well for 10-12 minutes. Now add 2 boiled potatoes, 2 tbsp flour, 4 tbsp bread crumbs Mix well and shape them into cutlets. Refrigerate for 20 mins, and then shallow fry using refined oil or ghee. Serve hot.
