Now this one pot meal can be had both as a healthy lunch or a dinner option. We Indians have a thing for khichdis, it is the ultimate healthy comfort food for us. Be it a long day at work or a sick day, khichdis are always good to come back home to. Quinoa khichdi is the healthier version of every desi’s favourite rice meal.
This is how you make it:
· Pour some ghee in an already heated pot and add some bay leaf, jeera and ginger garlic into the hot oil.
· Let it sputter for a while and then sauté some chopped onions in it. Keep frying till it turns transparent.
· One can now add all the colourful veggies that are usually added in your khichdi.
· Cook for a while and then add moong dal, quinoa, a little bit of haldi, garam masala and all the other masalas of your choice.
· Pour some good amount of water and add salt according to your taste. Close the lid of the pot and let it be for five minutes on medium flame.
· Wait for the whistle to go off and then take it out of the pot.
