This is the healthier version of the very famous South Indian delicacy, curd rice. This recipe can heal stomach upsets and is great to have during the hot summer days.
This is how you make it:
· Rinse the quinoa and put it into a pressure cooker with 1.5 cups of water. Close the lid and put it in medium flame till the whistle goes off. Wait for two whistles and let the cooker cool down.
· Now take out the quinoa and mash it up gently with a spoon.
· Add dahi and milk next. Add some grated carrots or any veggie of your choice. Sprinkle salt and mix well.
· On a pan, heat a little bit of coconut oil and add mustard seeds, jeera, bay leaf and some urad dal- the must haves of every south Indian dish.
· Let them sputter. Now sauté a little bit ginger garlic paste, curry leaves and green chillies in the pan.
· Keep sauteing for a while and then pour this mixture over the quinoa mix that you had prepared earlier.
